Coconut Curry Lentil Soup

Ingredients:

1 cup red lentils, rinsed

4 cups vegetable broth

1 can coconut milk (full-fat)

1 onion, diced

2 cloves garlic, minced

1 tablespoon curry powder

1/2 teaspoon ground turmeric

1/2 teaspoon ground ginger

Juice of 1 lime

Salt and pepper, to taste

Fresh cilantro leaves, for garnish


Instructions:

In a large pot, heat a drizzle of oil over medium heat. Add diced onion and minced garlic, sauté until softened.

Stir in curry powder, ground turmeric, and ground ginger, cook for another minute until fragrant.

Add rinsed red lentils, vegetable broth, and coconut milk to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.

Stir in lime juice, season with salt and pepper to taste.

Garnish with fresh cilantro leaves before serving.
